Crock It! Barbecue Chicken

This was definitely both an emergency and family friendly meal. I knew I needed to make dinner ahead of time today but completely spaced on what that would be. This recipe was both fast and easy and by using simple ingredients worked with my pantry and my kids’ taste buds.

Chicken Barbecue

Ingredients:

1 1/2 Cups sliced onions

1 Lemon, sliced and seeded

8 total pieces of chicken either split breasts or thighs, skin removed

1 18oz. bottle of barbecue sauce

1/2 cup cola

1/4 Cup flour

1/4 Cup water

What’s next:

  • Saute onion in a skillet with a little olive oil until soft, but not browned. Place in a single layer in slow cooker. Top with lemon slices and then chicken.
  • Combine barbecue sauce and cola and stir well with a whisk.
  • Pour over chicken.
  • Cook on high heat for 2 hours, then on low for 4-5 hours until chicken is tender.
  • Remove chicken and lemon slices, leaving liquid in slow cooker. Cover chicken to keep warm and discard lemon slices.
  • Increase slow cooker heat to high setting. Place flour in a small bowl. Gradually add water, stirring with a whisk until well blended. Add mixture to sauce in slow cooker and stir.
  • Cook 10 minutes or until thick.
  • Serve sauce over chicken.

Notes from my experience:

One of my favorite things about this meal is that I did not need to cook the chicken first. I love that!

The flavors were good  and the sauce is so simple you can adjust flavorings to your own taste or make your own barbecue sauce.

While the recipe above suggests placing sauce over chicken, I made a sandwich out of my chicken using a ciabatta roll.  That’s what I’d do if I were to make this again. it was delicious and very filling. Great for a weeknight dinner.
