3. Mardi Gras Founder Opens Sandwich Shop: Two decades ago, Barbi Ellen Newman made the eastern end of Verona a dining destination when she opened the doors at Mardi Gras Fine Foods. She sold the business in 2007 and stayed out of the food limelight until this January, when she opened the doors on Red’s Dips and Flips in West Caldwell. The menu is built around a Chicago-style beef sandwich, which Newman came to love while working at the Ritz-Carlton in the Windy City.
