Verona native Mark Papera was the original owner and chef at Epernay, the French Bistro on Park Street in Montclair. He sold it and moved away six years ago, and Epernay closed at the end of October.

Now Baristanet says Papera is returning. The place will now be called Fricasseè French Bistro, and it will begin service in February. More details here.

UPDATE: Hot From The Kettle, a Montclair food blog, had the Epernay-Fricasee story first. Details here.
