Linette Mathewson, MyVeronaNJ.com’s ad salesperson, says she is a scratch baker “only when necessary”. We guess she’s not the only one in Verona, where work, school and sports schedules don’t often leave time for cooking, let alone baking.
So it is perhaps no surprise that when MyVeronaNJ.com put out a call for holiday cookie recipes, Mathewson responded with one drawn from her mother-in-law’s recipe box that she says is easy to make. “The cookie is rich yet light, looks a bit fancy and appeals to all ages,” she adds.
Almond Lace Cookies
Makes 4–5 dozen
Ingredients
1 cup old-fashioned oats, uncooked
1 cup sugar
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1 egg, lightly beaten
1/2 c. unsalted butter, melted
1 tsp. vanilla extract
1 c. sliced almonds”
Mixing
Combine oats, sugar, flour, salt and baking powder. Whisk egg, butter, and vanilla. Then add this mixture to the dry ingredients. Add almonds and stir.
Line cookie sheets with foil and spray with nonstick cooking spray. Drop teaspoons of dough, 3 inches apart, on prepared sheet. Flatten slightly.
Bake at 325 degrees until golden brown, 9–11 minutes.
Let cool. Then peel from foil and enjoy!
